Beef in oystersauce

1 pound beef flank steak, sliced.

1 tablespoon cornstarch

1 tablespoon dry sherry

1 tablespoon dark soy sauce

2 tablespoons sugar

3 tablespoons canola, corn, or peanut oil

1 large onion, peeled and quartered

2 slices unpeeled gingerroot, 1 X 1/8 inch each

2 garlic cloves, crushed and peeled

1/4 cup water

4 tablespoons oyster sauce

1. Place the beef in a bowl, stir the cornstarch, sherry, soy sauce, and sugar, and mix well. Set aside.

2. Heat the oil in a wok or stir-fry pan over high heat until hot but not smoking. Test by dipping the tip of a spatula in the beef mixture and then into the oil; it should sizzle. Add the onion, gingerroot, and garlic. Stir constantly for 1 minute. Do not brown.

3. Stir up the beef mixture again and pour it into the pan. Stir briskly for about 2 minutes, or until the beef is almost done. Add the water and oyster sauce and stir over high heat for 1 minute or less, or until the beef is cooked and the ingredients are well mixed and heated through. Discard the gingerroot and garlic, if desired. Serve immediately.
